- 1 1/4 lb. flounder
- 1 Tbsp. lemon juice
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1/2 tsp. grated onion
- 1 (3 oz.) can mushrooms (undrained)
- 1/4 c. Parmesan cheese
- 1/4 tsp. salt
- 1/8 tsp. paprika
- 1/2 c. light cream
Directions

1In a shallow greased baking dish, arrange the fillets in one layer.

2Sprinkle with lemon juice.

3In a small saucepan, melt the butter over low heat; stir in flour, onion, salt and paprika.

4Add cream and mushrooms, including liquid, in pan.

5Cook, stirring constantly, until thick.

6Pour over fillets; sprinkle with cheese. Bake in a preheated oven for 25 minutes at 350°.

7Makes 4 servings.
