- 1 1/2 c. water
- 3/4 c. uncooked rice
- 8 oz. Monterey Jack cheese, shredded
- 1 (4 oz.) can chopped green chilies
- 1/2 c. chopped green onion
- 1/2 c. parsley flakes
- 1/2 c. margarine
- 2 eggs
- 1 c. milk
Directions

1Cook rice according to directions; set aside.

2Lightly grease 9 x 1 1/2-inch baking dish.

3Combine rice, cheese, chilies, onions and parsley; mix.

4Melt margarine.

5Beat eggs and combine with milk and margarine.

6Mix with rice mixture.

7Spoon into greased baking dish.

8Bake at 350° for 45 to 50 minutes.
