Baked Jack Corn

Ingredients

  • 2 large eggs
  • 1 1/2 c. sour cream
  • 2 c. fresh corn kernels or 2 c. canned white corn or frozen Shoepeg corn
  • 8 oz. Monterey Jack cheese, cut in 1/2-inch cubes
  • 1/2 c. soft bread crumbs
  • 4 1/2 oz. can chopped green chilies
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. shredded Cheddar cheese

Directions

    Mix all except Cheddar cheese.

    Pour in greased 2-quart dish. Bake at 350° for 35 minutes.

    Sprinkle with Cheddar cheese and bake 5 minutes more.
