- 1 lb. Ricotta cheese
- 1/2 lb. shredded Mozzarella
- 3/4 c. Parmesan cheese (reserve 1/4 c.)
- 2 eggs
- 1 tsp. parsley flakes
- salt and pepper to taste
- 1 (15 oz.) jar spaghetti sauce
- 1 (5 oz.) pkg. manicotti, cooked and drained
Directions

1Preheat oven to 350°.

2Combine cheeses, eggs and seasonings. Mix well.

3Pour 1/2 cup spaghetti sauce into an 11 x 7-inch baking dish.

4Fill manicotti shells with 3 tablespoons cheese mixture and arrange sauce over top and sprinkle with remaining Parmesan cheese. Bake 45 minutes or until bubbly.
