Baked Mushrooms With Gammon And Pineapple Recipe

  • 1 x 175 gram thi cut gammon steaks, grilled (6oz)
  • 2 x Pineapple rings, cubed
  • 6 lrg Flat mushrooms, stalks trimmed
  • 1 Tbsp. Freshly minced parsley
  • 25 gm Butter, melted (1oz)
  • 1 x Clove garlic, crushed Salt and freshly grnd black pepper
  • 6 lrg Flat mushrooms, stalks trimmed
  • 6 lrg Flat mushrooms, stalks trimmed

Directions

    Dice the gammon and mix with the pineapple, parsley, half the butter, garlic and seasoning to taste.

    Spoon the mix into the mushrooms and place on a lightly greased baking tray.

    Brush the outside of the mushrooms with remaining butter and place in a preheated oven 190 /375 F/Gas Mark 5 for 15 min.

    Serve immediately with hot crusty bread.
