  • 2 large eggs
  • 1/2 c. milk
  • 1/2 c. all-purpose flour
  • 1/4 tsp. salt
  • pinch of ground nutmeg
  • 1 Tbsp. olive or vegetable oil

Directions

    In blender, process eggs, milk, flour, salt and nutmeg until smooth, or whisk by hand.

    Heat oven to 450°.

    Heat oil in skillet, pie pan or baking dish in oven for 5 minutes.

    When very hot, pour in batter.

    Bake, uncovered, 18 to 20 minutes without opening door, until pancake is puffed and crisp around the edges and golden brown in the middle.

    Cut in wedges.
