- 2 large eggs
- 1/2 c. milk
- 1/2 c. all-purpose flour
- 1/4 tsp. salt
- pinch of ground nutmeg
- 1 Tbsp. olive or vegetable oil
Directions

1In blender, process eggs, milk, flour, salt and nutmeg until smooth, or whisk by hand.

2Heat oven to 450°.

3Heat oil in skillet, pie pan or baking dish in oven for 5 minutes.

4When very hot, pour in batter.

5Bake, uncovered, 18 to 20 minutes without opening door, until pancake is puffed and crisp around the edges and golden brown in the middle.

6Cut in wedges.
