  • 2 (20 oz.) cans chunked pineapple, drained (save)
  • 6 Tbsp. pineapple juice
  • 1/2 c. sugar
  • 6 Tbsp. flour
  • 1 1/4 c. shredded Cheddar cheese
  • 1/4 c. butter or margarine
  • Ritz crackers

Directions

    Place drained pineapple in baking dish (8-inch square). Combine sugar, flour and cheese. Add pineapple juice. Spread mixture over pineapple. Melt butter or margarine in frying pan. Add as many Ritz crackers as it takes to absorb melted butter. Sprinkle this evenly over casserole. Bake in 350° oven for 20 to 30 minutes.
