Baked Pineapple

  • 1 (20 oz.) can pineapple chunks
  • 1/2 c. sugar or equivalent substitute
  • 3 Tbsp. flour
  • 1 c. shredded Cheddar cheese
  • 1/4 c. melted butter
  • 1/2 c. crushed cracker crumbs

    Drain pineapple, reserving 3 tablespoons juice.

    Combine sugar, flour and stir into 3 tablespoons flour.

    Mix well.

    Pour over pineapple, add cheese and flour mixture.

    Mix well and pour into greased casserole.

    Combine crumbs with melted butter and sprinkle over top.

    Bake at 350° for 20 to 30 minutes until crumbs are golden.

    Serves 4 to 6.
