Baked Potato Skins

- 6 large baking potatoes
- 3 to 4 Tbsp. butter or margarine, melted
- 1 1/4 tsp. freshly ground pepper
- 1/2 tsp. onion salt
- 1/2 tsp. garlic salt
- 1/4 c. grated Parmesan cheese
- mock sour cream
Directions

1Scrub potatoes thoroughly and prick several times with a fork. Bake at 400° for 1 to 1 1/4 hours or until done.

2Allow to cool to touch; cut potatoes in halves lengthwise.

3Carefully scoop out pulp, leaving about 1/4-inch thick shell; cut into inch wide strips and place on ungreased baking sheets.

4Brush top of strips with butter; sprinkle with seasoning and cheese.

5Bake at 400° for 10 to 12 minutes or until crisp.

6Serve warm with sour cream.

7Makes 3 dozen.

8Reserve pulp for other uses.
