Baked Potato Skins

  • 6 large baking potatoes
  • 3 to 4 Tbsp. butter or margarine, melted
  • 1 1/4 tsp. freshly ground pepper
  • 1/2 tsp. onion salt
  • 1/2 tsp. garlic salt
  • 1/4 c. grated Parmesan cheese
  • mock sour cream

Directions

    Scrub potatoes thoroughly and prick several times with a fork. Bake at 400° for 1 to 1 1/4 hours or until done.

    Allow to cool to touch; cut potatoes in halves lengthwise.

    Carefully scoop out pulp, leaving about 1/4-inch thick shell; cut into inch wide strips and place on ungreased baking sheets.

    Brush top of strips with butter; sprinkle with seasoning and cheese.

    Bake at 400° for 10 to 12 minutes or until crisp.

    Serve warm with sour cream.

    Makes 3 dozen.
