- 1 tsp. black pepper
- 2 Tbsp. salt
- 2 Tbsp. garlic powder
- onion, sliced
- carrots, quartered
- potatoes, quartered
Directions

1Parboil coon for 30 minutes in salt water; drain and place in shallow baking dish.

2Blend spices and liberally cover coon. Surround with sliced onions.

3Cover and bake at 300° for 45 minutes.

4Place carrots and potatoes in juice and continue to bake until vegetables are tender.

5Uncover and broil to brown.
