Baked Red Snapper

Ingredients
- 1 (5 to 8 lb.) red snapper or fillets
- 1 stick oleo
- 1/4 to 1/2 c. chopped bell pepper
- 1/4 to 1/2 c. chopped onion
- 1/4 c. chopped celery
- 1/4 c. chopped green onion
- 2 or 3 lemons, sliced
- 2 cans stewed tomatoes
- 1/2 c. wine (red or white)
- salt and pepper to taste
Directions

1Melt oleo and saute bell pepper, onions, celery and green onions until tender.

2Add tomatoes, wine and seasoning.

3Cook slowly on medium heat for 20 minutes.

4Place fish in baking dish. Pour sauce over fish.

5Add sliced lemons over fish and bake at 350° for 30 to 40 minutes.

6Baste fish with sauce.

7Fish should be tender when stuck with a fork.
