Baked Red Snapper

Ingredients

  • 1 (5 to 8 lb.) red snapper or fillets
  • 1 stick oleo
  • 1/4 to 1/2 c. chopped bell pepper
  • 1/4 to 1/2 c. chopped onion
  • 1/4 c. chopped celery
  • 1/4 c. chopped green onion
  • 2 or 3 lemons, sliced
  • 2 cans stewed tomatoes
  • 1/2 c. wine (red or white)
  • salt and pepper to taste

Directions

    Melt oleo and saute bell pepper, onions, celery and green onions until tender.

    Add tomatoes, wine and seasoning.

    Cook slowly on medium heat for 20 minutes.

    Place fish in baking dish. Pour sauce over fish.

    Add sliced lemons over fish and bake at 350° for 30 to 40 minutes.

    Baste fish with sauce.

    Fish should be tender when stuck with a fork.
