Ingredients

  • 1/4 lb. butter
  • 1 big onion, chopped fine
  • 2 c. rice
  • 2 cans beef consomme
  • 1/2 lb. sharp cheese, grated
  • 2 cans small mushrooms with liquid
  • 1 c. brown toasted almonds

Directions

    Saute onion in butter.

    Add uncooked rice and simmer 5 minutes.

    Pour all ingredients into casserole except almonds. Cover; bake 1 hour at 325°.

    Stir in almonds when done.
