- 1/4 lb. butter
- 1 big onion, chopped fine
- 2 c. rice
- 2 cans beef consomme
- 1/2 lb. sharp cheese, grated
- 2 cans small mushrooms with liquid
- 1 c. brown toasted almonds
Directions

1Saute onion in butter.

2Add uncooked rice and simmer 5 minutes.

3Pour all ingredients into casserole except almonds. Cover; bake 1 hour at 325°.

4Stir in almonds when done.

5Serves 8.
