Ingredients
- 2 Tbsp. minced onion
- 2 1/2 Tbsp. margarine, divided
- 1 1/2 c. chicken broth or 1 1/2 tsp. chicken bouillon, dissolved in 1 1/2 c. water
- 1/2 bay leaf
- 1/2 tsp. minced garlic
- 1 c. rice (not Minute rice)
- 3 sprigs parsley
- 1 sprig fresh thyme or 1/4 tsp. dried thyme
Directions

1Saute onion and garlic in half of the margarine until onion is translucent.

2Add rice and stir over low heat until rice is coated.

3Stir in broth.

4Add parsley, thyme and bay leaf.

5Cover and bake in preheated 400° oven for 17 minutes or until rice is fluffy.

6Discard herbs and stir in remaining margarine.
