Ingredients
- 1/2 c. rice
- 4 c. scalded milk
- 1/2 tsp. salt
- 2/3 c. sugar
- grated rind of 1/2 lemon
- 1/4 tsp. nutmeg
- 1/2 c. raisins
- 2 well beaten eggs
Directions

1Wash rice and mix with milk, salt, sugar, lemon rind, nutmeg and raisins.

2Pour into greased baking dish.

3Bake in slow oven at 325° for 2 1/2 hours, stirring 3 times during the first hour of baking.

4If desired, stir in eggs 30 minutes before pudding is removed from oven.
