Baked Rice Pudding

  • 4 eggs, beaten
  • 3 c. milk
  • 1/3 c. sugar
  • 1/4 tsp. salt
  • 2 tsp. vanilla extract
  • 2 tsp. grated lemon peel
  • 2 c. cooked rice

Directions

    Combine all ingredients and pour into a 2 1/2-quart baking dish.

    Set dish in a pan of hot water.

    Bake at 300° for 1 hour. After 30 minutes, inserted spoon at edge of pudding and stir from bottom.

    Continue baking until knife inserted near center of pudding comes out clean.

    Serve hot or cold.

    Makes 6 to 8 servings.
