Baked Rice Pudding

  • 3 beaten eggs
  • 2 c. milk
  • 1/2 c. sugar
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1 3/4 to 2 c. cooked or leftover rice
  • 1/3 to 1/2 c. raisins (optional)
  • ground nutmeg

Directions

    Combine eggs, milk, sugar, vanilla and salt. Mix well. Add rice and raisins.

    Pour into 10 x 6 x 1 3/4-inch baking dish. Bake, uncovered, at 325° for 30 minutes. Stir.

    Sprinkle with nutmeg.

    Bake until knife inserted halfway between center and edge comes out clean, about 30 minutes more.
