- 3 beaten eggs
- 2 c. milk
- 1/2 c. sugar
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1 3/4 to 2 c. cooked or leftover rice
- 1/3 to 1/2 c. raisins (optional)
- ground nutmeg
Directions

1Combine eggs, milk, sugar, vanilla and salt. Mix well. Add rice and raisins.

2Pour into 10 x 6 x 1 3/4-inch baking dish. Bake, uncovered, at 325° for 30 minutes. Stir.

3Sprinkle with nutmeg.

4Bake until knife inserted halfway between center and edge comes out clean, about 30 minutes more.
