Baked Rice Pudding

  • 3 egg whites
  • 1 egg
  • 1-1/2 cups milk
  • 1/4 c sugar
  • 1 t. vanilla
  • 2/3 c cooked brown rice
  • 1/3 cups dates/or raisins chopped
  • pinch of nutmeg or cinnamon

    In medium bowl combine egg whites,egg,milk,sugar,vanilla. Beat ntil combined but not foamy

    add cooked rice and dates/raisins and mix well

    Pour rice mixture into 1-1/2 quart casserole dish. Plase casserole dish in baking pan then place in oven. Pour boiled water into baking pan around casserole dish to depth of 1 inch

    bake uncovered at 325 for 45 minutes or untill knife inserted halfway comes out clean

    serve warm or chilled with sprinkle of nutmeg or cinnamon
