- 1 lb. frozen fillets of sole
- 1/4 tsp. salt
- 1 (4 oz.) can sliced mushrooms, drained
- 1 carrot, thinly sliced
- 2 Tbsp. finely chopped green onion
- 1 tsp. minced parsley
- 1/4 c. light cream
- 2 Tbsp. butter or margarine
- 2 Tbsp. shredded American cheese
Directions

1Heat oven to 375° (moderately hot).

2Thaw fish fillets enough to separate.

3Arrange in a greased shallow baking dish.

4Sprinkle with salt.

5Arrange mushrooms, carrot, onion and parsley on fish. Pour in cream.

6Dot top with butter and sprinkle with cheese. Bake 20 to 30 minutes until fish is fork-tender

7Serves 2.
