  • 1 1/2 lb. fillet of sole
  • 3/4 tsp. salt
  • few grains of pepper
  • 1/4 c. milk
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 c. milk
  • 1 tsp. sherry flavoring
  • 1/4 c. grated cheese

    Place fish in greased baking dish. Sprinkle with salt and pepper.

    a 350° oven for 30 minutes. Melt butter and flour. Blend gradually.

    Cook over low heat until smooth and thick, stirring constantly. Add sherry flavoring and cheese.
