Cajun Fried Chicken

  • vegetable oil (for frying)
  • 1 c. flour
  • 1 Tbsp. Cajun seasoning or mix 1 tsp. paprika, 1/2 tsp. each: garlic and onion powders, 1/4 tsp. salt and dried thyme leaves and 1/8 tsp. pepper
  • 1 1/4 tsp. salt
  • 1 large egg
  • 1/4 c. milk
  • 2 tsp. hot red pepper sauce
  • 4 skinless, boneless chicken breast halves fillets, all pieces halved crosswise

    In large skillet, heat 1/2-inch oil to 400°.

    In large bowl, mix flour, seasoning and 1 teaspoon salt.

    In another bowl, mix egg, milk and pepper sauce.

    Sprinkle chicken with remaining salt. Coat with egg mixture; drain off excess.

    Coat with flour; shake off excess.

    In hot oil, fry chicken 6 minutes or until browned and cooked.

    Drain.
