Baked Spinach Balls

- 2 (10 oz.) pkg. frozen, chopped spinach
- 6 eggs
- 1 c. grated Parmesan cheese
- 3/4 c. butter, softened
- 1 Tbsp. chopped, fresh parsley
- salt and pepper to taste
- 2 c. stuffing mix, crushed
Directions

1Cook spinach following directions; drain well.

2Set aside. Heat oven to 350°.

3In medium bowl, combine eggs, cheese, butter, parsley, salt and pepper.

4Mix well.

5Stir in spinach and stuffing mix.

6Shape into small balls.

7Place on ungreased cookie sheet. Bake about 10 minutes.

8Serve warm.

9Makes 3 to 4 dozen.
