Baked Spinach Casserole Recipe

  • 3 Tbsp. butter
  • 2 c. light cream
  • 3 Tbsp. onion, grated
  • 2 pkt frzn spinach, thawed and liquid removed
  • 1 lb mushrooms, minced
  • 3 Tbsp. gruyere or possibly swiss cheese, grated
  • 3 Tbsp. flour
  • 2 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 tsp white pepper

    Preheat oven to 325 degrees.

    Saute/fry' onions and mushrooms in butter for 5 min.

    Blend in flour, salt, pepper and nutmeg.

    Gradually add in cream, stirring to boiling point.

    Taste for seasoning.

    In buttered casserole, spread half the spinach; cover with half of the mushroom sauce, then repeat.

    Sprinkle with the grated cheese.

    Set in pan of warm water.

    Bake for 40 min.
