  • 2 1/2 lb. yellow squash
  • 1 egg, beaten
  • 1 c. bread crumbs, divided
  • 4 Tbsp. chopped onion
  • 4 Tbsp. soft margarine
  • 1/8 c. sugar
  • salt and pepper to taste

Directions

    Cube and cook squash until tender; drain and mash. Add beaten egg, 1/2 cup bread crumbs, onion, margarine, sugar, salt and pepper to taste. Mix well and pour into a greased 7 x 11-inch casserole dish. Sprinkle with remaining bread crumbs. Bake at 350° for 20 to 30 minutes, until lightly browned and bubbly.
