Baked Squash

  • 4 medium squash
  • 1/3 c. pepper, chopped
  • 1/3 c. onion, chopped
  • 3 Tbsp. Parmesan cheese
  • 1 egg
  • 5 crackers, crumbled
  • 1/4 tsp. oregano
  • 1/2 tsp. salt

Directions

    Boil the whole squash in salt water until tender.

    Carefully slice top off squash and use spoon to remove the inside.
  3. 3
    Leave 1/2-inch shell.

    Saute pepper and onion until done.

    Combine onion, pepper, cheese, egg, crackers and oregano with the squash removed from inside.

    Mix well and put in shells.

    Bake at 350° for 25 minutes.
