- 6 large yellow squash
- 1 onion, finely minced
- 1 small green pepper, finely minced
- salt and pepper to taste
- 2 slices bacon, cooked and crumbled
- 2 Tbsp. butter, melted
- bread crumbs
Directions

1Cut squash in half lengthwise and parboil in salted water for 8 to 10 minutes.

2Drain.

3After cooling, scoop out pulp, leaving a 1/4-inch shell.

4Mash squash pulp and add onion, green pepper, salt and pepper.

5Add bacon bits and butter.

6Fill squash shells with mixture; sprinkle with bread crumbs.

7Bake for 20 minutes at 350°.
