Ingredients

  • 2 1/4 lb. yellow squash
  • 1 green onion, minced
  • 1/4 tsp. salt
  • 1/2 c. bread crumbs
  • 1/2 c. sour cream
  • 1/4 c. butter
  • 1/4 tsp. pepper

Directions

    Cook squash in enough water to cover until tender.

    Drain and mash.

    Add sour cream, onion, butter, salt and pepper.

    Pour into a buttered 1 1/2-quart casserole dish.

    Top with bread crumbs and bake at 350° for 20 minutes.
