Baked Squash

Ingredients

  • 3 c. little yellow squash
  • 2 eggs
  • 1 tsp. butter
  • 1 c. grated sharp cheese
  • 1 medium onion, cut fine
  • 1 tsp. sugar
  • 1/2 c. buttered bread crumbs

Directions

    Cook the squash, cut in slices, in 1-inch of water until tender with 1 teaspoon salt. Drain and mash.

    Mix together eggs (beaten well), butter, cheese, onion and sugar.

    Pour in casserole. Cover with crumbs. Bake 20 minutes at 350°.

    Serves 6 to 8.
