- 6 c. diced zucchini
- 1 c. cream of celery or mushroom soup
- 1 c. chopped onion
- 1 c. shredded carrots
- 1 c. sour cream
- 1 (8 oz.) pkg. stuffing mix (Stouffer's or Pepperidge Farm)
- 1 c. butter
Directions

1Boil the zucchini and onion in salted water.

2Mix soup, carrots, sour cream and zucchini.

3Put stuffing in blender and shred.

4Mix with melted butter.

5Put 1/2 mixture in 9 x 13-inch pan.

6Pour zucchini mixture in and sprinkle rest of mixture on top.

7Bake at 350° for 20 to 30 minutes.
