Ingredients
- 8 beets, medium-sized
- 14 cup walnuts, chopped
- 2 tablespoons balsamic vinegar (I prefer Aged Balsamic Vinegar of Modena)
- 1 tablespoon extra virgin olive oil
- 18 teaspoon salt
- 18 teaspoon pepper
- 12 cup goat cheese, crumbled
- 1 teaspoon fresh thyme leaves, only
Directions

1In a large pot, cover the beets with salted water and bring to a boil.

2Reduce to a simmer and cook until beets are just tender, about 30 minutes.

3Meanwhile, lightly toast the walnuts in a dry skillet over medium heat.

4Set aside to cool.

5Drain the beets and run under cold water until cool enough to handle, but still warm.

6Gently rub the skins off.

7Slice the beets into 1/8-inch rounds and arrange on a platter.

8Drizzle with the vinegar, olive oil, and season with salt and pepper.

9Sprinkle with the walnuts , cheese and thyme, and serve!
