Balsamic Chicken

  • 1/2 cups Balsamic Vinegar
  • 2 Tablespoons Honey
  • 1/2 cups Breadcrumbs
  • 1/4 cups Parmesan Cheese, Grated
  • 1/2 pounds Chicken Breast, Boneless, Skinless
  • 2 Tablespoons Olive Oil

Directions

    Mix the balsamic vinegar and honey together and set aside.

    Mix the breadcrumbs and the Parmesan cheese.

    Pound the chicken to 1/2-inch thickness.

    Heat a frying pan to medium-high heat.

    Add olive oil.

    While it is heating up, press the chicken into the breadcrumb mixture to coat lightly.

    Saute the chicken until done, about 3 minutes each side.

    Remove chicken from the pan and keep warm.

    Carefully pour balsamic vinegar mixture into the fry pan and stir.

    It may splatter some, so be careful.

    Once it starts to thicken up, add the chicken back in to coat it.

    To serve, place the chicken on a platter and pour sauce over it.
