Balsamic Onion Rings

- 1 tbsp olive oil
- 2 tbsp sugar
- 1/4 cup balsamic vinegar
- 1 large onion (I prefer a sweeter onion), cut into 1/4 inch thick slices and separated into rings
Directions

1Heat the oil in a large skillet over medium high heat.

2Add the onion rings and the sugar and cook until golden brown and tender, about 5 minutes.

3Make sure to stir them around as they cook.

4Add the vinegar and cook until the liquid is absorbed, about 2 minutes.

5Season to taste with salt and pepper.

6*We had this with steak the last time we made it, but it goes well with grilled boneless skinless chicken breasts also.
