Balsamic Onion Rings

  • 1 tbsp olive oil
  • 2 tbsp sugar
  • 1/4 cup balsamic vinegar
  • 1 large onion (I prefer a sweeter onion), cut into 1/4 inch thick slices and separated into rings

Directions

    Heat the oil in a large skillet over medium high heat.

    Add the onion rings and the sugar and cook until golden brown and tender, about 5 minutes.

    Make sure to stir them around as they cook.

    Add the vinegar and cook until the liquid is absorbed, about 2 minutes.

    Season to taste with salt and pepper.

    *We had this with steak the last time we made it, but it goes well with grilled boneless skinless chicken breasts also.
