- 1 3/4 c. sifted all-purpose flour
- 2 3/4 tsp. baking powder
- 1/2 tsp. salt
- 1/3 c. shortening
- 2/3 c. sugar
- 2 slightly beaten eggs
- 1 c. mashed ripe bananas (3 or 4)
Directions

1Sift flour, baking powder and salt.

2Beat shortening until creamy and glossy, 2 minutes at medium speed.

3Gradually add sugar; beat until light and fluffy after each addition.

4Add eggs, beat until thick and pale lemon in color.

5Add flour mixture and bananas alternately; blend thoroughly after each addition.

6Grease bottom of pan only.

7Bake at 350° for 60 to 70 minutes.

8Let bread cool in pan 20 to 30 minutes.
