- 1 3/4 c. flour
- 2/3 c. sugar
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. salt
- 1 c. mashed bananas (2 ripe)
- 2 eggs, slightly beaten
- 1/2 c. shortening
Directions

1Day Before Serving:

2Preheat oven to 350°.

3Grease and flour 9 x 5-inch loaf pan.

4In a large bowl, mix first 5 ingredients with fork.

5With pastry blender, cut shortening into mixture until it resembles coarse crumbs.

6With fork, stir in bananas and eggs just until blended.

7Spread evenly in pan. Bake 55 minutes to 1 hour until toothpick inserted in center comes out clean.

8Cool in pan on rack 10 minutes.

9Remove from pan and cool completely on rack. Makes 1 loaf.
