  • cooking spray
  • 1/3 c. vegetable oil
  • 2 pkg. black walnuts
  • 1/3 c. sugar
  • 1 c. mashed banana
  • 1 3/4 c. plain flour
  • 1/4 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • 2 tsp. baking powder
  • 3 egg whites
  • 1/3 c. sugar (again)

Directions

    Preheat oven to 350°.

    Spray a loaf pan with cooking spray. In large bowl, beat oil and 1/3 cup sugar.

    Add banana and chopped walnuts, mixing well.

    In another bowl, beat egg whites until foamy.

    Slowly add 1/3 cup sugar, beating until whites form peaks. Fold whites into batter.

    Pour into loaf pan.

    Bake 55 minutes.
