- 2 cups All-purpose Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 1 teaspoon Salt
- 1/2 cups Shortening
- 1 cup Sugar
- 2 whole Eggs
- 1 cup Mashed Bananas
Directions

1Preheat the oven to 350° F. Spray a large loaf pan with non-stick cooking spray.

2In a mixing bowl, combine the flour, baking powder, baking soda and salt. Set aside.

3In another, large bowl, cream the shortening and sugar together. Beat in the eggs. Add the mashed bananas and mix well.

4Stir the dry ingredients into the wet ingredients, mixing until blended.

5Pour the batter into the prepared loaf pan, leaving the center slightly hollow. Let the batter stand for 20 minutes.

6Bake for 60-70 minutes, or until a toothpick inserted comes out clean.
