  • 2 ripe medium bananas, mashed
  • 1 3/4 c. unsifted all-purpose flour
  • 1 c. chopped walnuts or pecans
  • 1/4 c. plus 1 tsp. buttermilk
  • 1 tsp. vanilla
  • 2 eggs
  • 1 1/2 c. sugar
  • 1/2 c. vegetable oil
  • 1 tsp. baking soda
  • 1/2 tsp. salt

Directions

    Grease and flour 9 x 5 loaf pan. Combine all ingredients in large bowl and mix well. Transfer to prepared pan. Bake at 325° until top is golden brown and splits slightly, about 1 hour and 20 minutes. Serve warm.
