Banana Bread Pudding

  • 6 slices day old bread
  • 3 tablespoons butter softened
  • 2 bananas ripe, cut into 2 inch angled slices
  • 1 cup frozen blueberries
  • 14 ounces sweetened condensed milk
  • 1/2 cup milk
  • 2 large eggs lightly beaten
  • 2 teaspoons cinnamon sugar
  • 1/2 cup cream heated
  • ice cream to serve

    Preheat oven to 350°F.

    Spread both sides of bread with butter. Cut in half. Arrange in a 6 cup baking dish, alternating with banana slices, slightly overlapping the pieces. Sprinkle with berries.

    In a large bowl, combine half condensed milk, all the milk and eggs and whisk well. Pour over bread and set aside 10 minutes. Sprinkle with cinnamon sugar.

    Bake pudding 45-50 minutes, until top is golden and custard mixture just set.

    Meanwhile, to make caramel sauce, place remaining condensed milk in a saucepan. Stir over a medium heat 5-6 minutes, until thick and golden. Mix in cream, stirring until smooth. Bring to a boil.

    Cool pudding 5-10 minutes. Serve with ice cream and caramel sauce.
