  • 3 baking potatoes
  • 3 12 cups milk
  • 4 ounces cream cheese
  • 2 tablespoons butter
  • 3 green onions with tops
  • 4 ounces sharp cheddar cheese, grated
  • 1 12 teaspoons salt
  • 12 teaspoon fresh coarse ground black pepper

    Slice potatos in half lengthwise place in microwavable bowl.

    Pour 1/2 cup of milk over potatoes.

    Micowave, covered, on High 11 minutes.

    Remove from microwave.

    Move center potatoes to ends and outer potatoes into the middle.

    Cover; microwave on high 8-11 minutes, or until potatoes are easily pierced with a fork.

    Remove from microwave.

    Coarsley mash potatoes.

    Meanwhile, whisk cream cheese until smooth in a seperate bowl.

    Slowly add remaining 3 cups of milk, whisking until smooth.

    Add cream cheese mixture and butter to the potatoe mixture.

    Micowave covered on high 3-5 minutes or until mixture is hot.

    While mixture in heating slice the green onions.

    Carefully remove from microwave.

    Grate cheddar cheese over chowder, add green onions, salt, pepper, and mix until the cheese is melted.

    Serve with toppings if desired like cooked bacon, sour cream, or broccoli florets.
