Banana Cream Pie

  • 1 c. sugar
  • 2 c. milk
  • 1/2 c. all-purpose flour
  • 1/4 tsp. salt
  • 3 slightly beaten egg yolks
  • 2 Tbsp. butter
  • 1 or 2 speckled yellow bananas, sliced
  • 1 tsp. vanilla
  • 1 (9-inch) baked pie shell
  • meringue (recipe follows)

Directions

    Combine sugar, flour and salt in a saucepan.

    Gradually stir in milk and stir to remove lumps.

    Cook over medium heat, stirring often, until the mixture boils.

    Cook, stirring constantly, 5 minutes more.

    Remove from heat.

    Stir a small amount of the hot mixture into beaten egg yolks and return to the hot mixture.

    Cook 3 minutes.

    Remove from heat.

    Add butter and vanilla.

    Slice bananas into pie shell.

    Pour hot milk mixture over bananas.

    Top with meringue and bake at 350° for 12 minutes or until meringue just begins to brown.
