  • 1 c. white flour
  • 1 1/4 c. whole wheat flour
  • 1/3 c. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 c. 1% buttermilk
  • 1/4 c. canola oil
  • 2 mashed ripe bananas
  • 2 egg whites
  • 1 c. currants

    Combine flours, sugar, baking powder, baking soda, cinnamon and nutmeg.

    In another bowl, combine buttermilk, oil, bananas and egg whites; add to dry mixture.

    Stir until all ingredients are moist.

    Fold in currants.

    Fill paper-lined muffin cups 3/4 full. Bake at 375° for 15 to 20 minutes or until done.
