- 1 c. white flour
- 1 1/4 c. whole wheat flour
- 1/3 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 c. 1% buttermilk
- 1/4 c. canola oil
- 2 mashed ripe bananas
- 2 egg whites
- 1 c. currants
Directions

1Combine flours, sugar, baking powder, baking soda, cinnamon and nutmeg.

2In another bowl, combine buttermilk, oil, bananas and egg whites; add to dry mixture.

3Stir until all ingredients are moist.

4Fold in currants.

5Fill paper-lined muffin cups 3/4 full. Bake at 375° for 15 to 20 minutes or until done.

6Cool and serve.
