Banana Dumplings

Ingredients

  • 1 to 2 lb. green bananas
  • 1 coconut (grind)
  • 4 to 6 c. water
  • 1/2 Tbsp. salt (optional)
  • 1/2 Tbsp. garlic powder or 2 chopped garlic cloves
  • 1/4 green or red fresh bell pepper
  • 1 to 2 lb. fish (your choice, optional)

Directions

    Combine coconut milk (grind coconut and water together and strain), salt, garlic and pepper in a large pot.

    Bring to a boil to get soup-like mixture.

    Peel green bananas and dip into boiling soup (above).
  4. 4
    Cut up the fish of your choice (i.e. snapper) and also dip into mixture.

    Let bananas (and fish) get tender (test with fork).

    Serve hot.
