Banana Jelled Pudding

  • 6 bananas, ripe peeled and mashed
  • 2 eggs
  • 12 cup sugar
  • 1 tablespoon lemon juice
  • 1 (3 ounce) package gelatin (like Jello)
  • water, as required

    Immediately add the lemon juice to the mashed bananas.

    Separate the eggs.

    Boil water, as specified on the package and prepare per instructions.

    Add bananas to gelatin.

    Add eggs yolk to sugar and beat until light and fluffy.

    Slowly add egg mixture to gelatin mixture in a double boiler over boiling water stirring continuously.

    Continue heating until the egg sugar mix dissolved completely in the gelatin mixture.

    Remove from heat and cool.

    Beat egg whites to stiff peaks.

    When gelatin is just beginning to set, fold in the stiff egg whites.

    Pour into a mold and chill until set.
