Ingredients

  • 2/3 c. shortening
  • 2 2/3 c. sugar
  • 4 eggs
  • 1 lb. fresh cooked pumpkin (2 c.)
  • 2/3 c. water
  • 3 1/3 c. flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 2/3 c. chopped nuts
  • 2/3 c. raisins
  • 1 c. mixed candied holiday fruit (optional)

Directions

    Heat oven to 350°.

    Grease 2 loaf pans or a Bundt pan.

    In large bowl, cream shortening and sugar until fluffy.

    Stir in eggs, pumpkin and water.

    Blend in flour and remaining ingredients, adding nuts, fruits and raisins last and mixing well.
