- 2 extra ripe bananas, peeled
- 3/4 c. brown sugar, packed
- 1/2 c. creamy peanut butter
- 1/4 c. margarine, softened
- 1 egg
- 1 1/2 c. old fashioned oats
- 1 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. raisins
Directions

1Mash bananas with a fork; measure one cup.

2Beat together the sugar, peanut butter and margarine; beat in egg and mashed bananas.

3Combine oats, flour, baking powder and salt; stir into banana mixture until well combined.

4Stir in raisins.

5Drop by heaping tablespoonfuls onto a cookie sheet coated with a cooking spray.

6Shape cookies with the back of a spoon.

7Bake at 375° for 12 to 14 minutes until lightly browned.

8Makes 18 cookies.
