- 1 egg
- 1/2 c. milk
- 1/4 c. vegetable oil
- 1 1/2 c. whole wheat flour
- 1/2 c. sugar
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 to 3 ripe bananas
- 1/2 c. chopped nuts
- 3/4 c. raisins
Directions

1Preheat oven to 375°.

2Beat egg with fork.

3Stir in milk and oil.

4Blend dry ingredients in a mixer bowl.

5Process bananas, then stir the bananas into the mixer bowl.

6Stir in the raisins and walnuts.

7Spoon the batter into 22 muffin cups coated with vegetable cooking spray.

8Bake for 15 to 20 minutes or until a golden brown.

9Remove from the tins immediately.

10Makes 22 muffins.
