Banana Nut Bread

  • 1 3/4 c. sifted flour
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 c. coarsely chopped nuts
  • 1/3 c. shortening
  • 2/3 c. sugar
  • 2 eggs, well beaten
  • 1 c. ripe bananas

Directions

    Sift flour, salt, baking powder and baking soda together. Beat shortening until fluffy.

    Add eggs; beat well.

    Add flour-nut mixture with mashed bananas, small amount at a time; beat well. Turn into greased pan and bake in medium oven, at 350° for about 1 hour and 10 minutes, or until done.

    Makes 1 loaf.

    Bake at 325° for a glass pan.
