Banana-Nut Bread

Ingredients

  • 3 ripe bananas
  • 2 eggs
  • 1 1/2 c. flour
  • 1/2 c. wheat germ or oatmeal
  • 1/4 c. oil
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1/2 c. nuts, coarsely chopped
  • 3/4 c. sugar
  • 1 tsp. vanilla

    Preheat oven to 350°.

    Mash bananas well with a fork.

    In the mixer, beat eggs until they are light.

    Add the mashed bananas and mix thoroughly.

    Sift together the dry ingredients, except the wheat germ, and add all, including wheat germ to the banana mixture; stir well.

    Add the nuts.

    Bake at 350° for 1 hour for the large pan, 50 minutes for smaller pans.

    This bread should be cooled before slicing.

    It freezes very well.

    Makes one 9 x 5-inch loaf or 2 small 7 1/2 x 3 1/2-inch loaves.
