Banana-Nut Bread

- 3 ripe bananas
- 2 eggs
- 1 1/2 c. flour
- 1/2 c. wheat germ or oatmeal
- 1/4 c. oil
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1/2 c. nuts, coarsely chopped
- 3/4 c. sugar
- 1 tsp. vanilla
Directions

1Preheat oven to 350°.

2Mash bananas well with a fork.

3In the mixer, beat eggs until they are light.

4Add the mashed bananas and mix thoroughly.

5Sift together the dry ingredients, except the wheat germ, and add all, including wheat germ to the banana mixture; stir well.

6Add the nuts.

7Bake at 350° for 1 hour for the large pan, 50 minutes for smaller pans.

8This bread should be cooled before slicing.

9It freezes very well.

10Makes one 9 x 5-inch loaf or 2 small 7 1/2 x 3 1/2-inch loaves.
