  • 1/2 c. shortening
  • 3/4 c. sugar
  • 1 egg
  • 1 Tbsp. lemon juice
  • 2 c. sifted flour
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 c. mashed bananas
  • 1 c. chopped nuts

    Cream the shortening and sugar.

    Add egg and beat well.

    Add dry ingredients, mixing well.

    Stir in bananas, lemon juice and nuts.

    Fill 3 well-greased No. 2 tin cans one-half full or 1 (9 x 5 x 3-inch) loaf pan.

    Bake at 350° for 60 to 70 minutes.

    Remove from pan or cans.

    Cool on rack.

    Yields 3 small loaves or 1 large loaf.
