Ingredients
- 2 1/2 c. flour
- 2 tsp. cornstarch
- 2 tsp. baking soda
- 1 tsp. salt
- 1 c. (2 sticks) butter, softened
- 2 c. sugar
- 5 medium ripe bananas, mashed
- 4 eggs, lightly beaten
- 1/2 c. sour cream
- 1 1/4 c. chopped walnuts
- 1 c. raisins
Directions

1Preheat oven to 350°.

2Lightly butter 3 large loaf pans or 8 mini loaf pans and dust with flour.

3Sift flour, cornstarch, baking soda and salt together.

4Cream butter and sugar together with electric beater until light and lemon colored, about 3 minutes.

5Add bananas, eggs and sour cream and continue to beat until smooth.

6Combine flour mixture with banana mixture, but do not overbeat.

7Stir in walnuts and raisins.

8Pour into prepared pans and bake for 45 minutes for mini loaves, 55 minutes for large loaves or until firm in the center and edges pull away from pan. Let rest on rack for 10 minutes; remove from pans and allow to cool slightly.
