Banana Nut Bread

- 2 large eggs, lightly beaten
- 1 c. mashed ripe bananas
- 1/2 c. margarine, melted
- 1 tsp. vanilla
- 1 1/2 c. all-purpose flour
- 1 tsp. baking soda
- 1 c. sugar
- 1/2 c. chopped pecans
- 1/4 c. coconut
- 1/4 c. raisins
Directions

1Combine first 4 ingredients in a large bowl.

2Stir well. Combine flour, soda and sugar.

3Add to banana mixture, stirring until well blended.

4Stir in pecans, coconut and raisins.

5Spoon batter into a greased and floured 8 1/2 x 4 1/2 x 3-inch loaf pan. Bake at 325° for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.

6Cool in pan for 10 minutes. Cover with foil the last 15 minutes of baking to prevent overbrowning, if necessary.
