Banana Nut Bread

  • 2 large eggs, lightly beaten
  • 1 c. mashed ripe bananas
  • 1/2 c. margarine, melted
  • 1 tsp. vanilla
  • 1 1/2 c. all-purpose flour
  • 1 tsp. baking soda
  • 1 c. sugar
  • 1/2 c. chopped pecans
  • 1/4 c. coconut
  • 1/4 c. raisins

Directions

    Combine first 4 ingredients in a large bowl.

    Stir well. Combine flour, soda and sugar.

    Add to banana mixture, stirring until well blended.

    Stir in pecans, coconut and raisins.

    Spoon batter into a greased and floured 8 1/2 x 4 1/2 x 3-inch loaf pan. Bake at 325° for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.

    Cool in pan for 10 minutes. Cover with foil the last 15 minutes of baking to prevent overbrowning, if necessary.
